Description: Norfolk Beefing is a very dark coloured cooking apple. Fruit is large greenish yellow, flushed dull crimson with short broken stripes. Flesh is white tinged green, very firm, coarse-textured, juicy and very acid. Best when it's used early in the season for baking as 'Biffins', when it has a quite rich taste and keeps shape. By spring, the fruit is sweet enough to eat. An extremely solid variety that keeps well.

History: Raised in Norfolk, England and was first recorded in 1807. Probably a lot older. Grown on a large commercial scale from 1914-1950s.
